In Traditional Chinese Medicine, it is recommended to eat according to the seasons to best support a healthy body and immune system.   Below is a recipe for Autumn to bring your body into balance. These foods will strengthen the immune system, as your body becomes more susceptible to illness with the changing season and cooler weather.

 

Butternut Squash Soup

1 Large butternut squash (roast first then cube for a more intense flavor) Kobucha can also be added.                                                                                                            1 medium onion, chopped
2-4 cloves of garlic, minced
1 stalk of celery, chopped                                                                                             Boiled chicken meat(optional. substitute a vegetarian low or no salt bouillon cube)                                                                                                                                     32oz of vegetable or chicken broth
Salt & pepper to taste                                                                                                                             1small cinnamon stick.   1 1/2 inch piece of ginger - grated.  Nutmeg as desired.

Sautee onions, garlic and celery and ginger in medium to large pot. Add cooked squash, cinnamon stick, along with 32 oz. vegetable or chicken broth and bouillon cube. Simmer for 30 minutes. Remove cinnamon stick. Either use an immersion blender to puree soup or allow to cool and puree in a blender. Add water or more broth to make a soup with a thiner consistency. Return to pot, add chicken, season with salt and pepper to taste and simmer for an additional 5 minutes.   If you prefer a spicier soup, add cayenne to taste.

Butternut squash soup is not too difficult to make and contains anti-oxidants, anti-inflammatory agents, nutrients and vitamins to help protect your body and keep you healthy throughout the flu and cold season.

Easy Beets Recipe

This is a healthy and easy way to prepare beets or beet-root as they are called in other parts of the world.   First select firm organic beets with the leafy green tops still attached.    

Cut off the tops and save for the next recipe.

Pre-heat oven to 380 degrees.

Scrub the beets to remove dirt and debris, and place the beets in a Pyrex or ceramic baking dish.   Add about 1/2 inch to 1inch of filtered water to the bottom of the container. Cover with the lid and bake in oven for 35-40 minutes, until beets are fork tender.   Remove from oven, peel and slice or cut into cubes. Drizzle with your favourite olive oil. Add salt and pepper to taste. Enjoy!
